Working off Yankee’s comment, I have the same Jacques Pepin book and love it. We pulled out the recipe for lobster when my cousin came for a visit last summer from Gloucester with live lobsters stored on a bed of seaweed - and while we didn’t use Jacques’ suggestion for preparing the lobsters, we did decide to try making his lobster bisque with the shells and water from boiling the luscious little beasts. After dinner, my cousin and I worked on the prep for the bisque (not fast food in any way, unlike most of the recipes in this book) then walked out of the kitchen just long enough for my husband to helpfully start the dishes - his first step was to pour the precious lobster water down the sink. Any other day, this would have been welcomed, but it was the major ingredient for the bisque we were preparing. So, we all laughed about it, and still do, and now we stick to the simple approach for lobster preparation. (Throw ‘em in a pot of boiling water with some garlic and lemons…)
